Key Lime Cheesecake
As you can probably tell – I LOVE CHEESECAKE!! This is the second cheesecake I’ve posted and whilst the first one was healthy and chocolate flavoured. This one is decadent, luxurious and a whole different flavour. I save this key lime cheesecake for those days where I want a pure unadulterated guilty dessert.
The creaminess and citrus notes combine for a real taste explosion! There aren’t any desserts I love more.
This is high in calories but also high in taste. It is definitely one to enjoy as an occasional treat. Your health wouldn’t benefit from eating this daily but sometimes things that are bad for us can be good for us in other ways.
This key lime cheesecake is perfect to enjoy with friends and is best served with a good gin cocktail. I love gin almost as much as I love cheesecake. Gin-wise Hendricks is the perfect choice.
Whilst this is a recipe for key lime cheesecake, I have cheated and used ordinary limes. Key limes are really more of an American thing. I don’t think I’ve ever seen them in a UK supermarket. If you can source them then you can use them but the taste difference is negligible so I wouldn’t bother to be honest.
You can substitute fresh limes for bottled lime juice if you wish but there will be a slight change in taste. Adding lime zest to the filling and topping is essential though. You won’t get the same fresh zing without it.
This cheesecake should be consumed quickly but this isn’t hard since once you have one slice you won’t want to stop!
